What does Christ say about celebrating his birth and resurrection?

Jesus said absolutely nothing about celebrating his birth. Of course, that doesn’t prohibit it; it just means it is not required.
Jesus did talk about celebrating his death, burial, and resurrection. Some people do that every week (churches of Christ, among others), some every third month, and others once a year (Jehovah’s Witnesses, anyone who only attends on Easter). It would probably not be wrong to celebrate it daily. We call that celebration the Lord’s Supper or the Eucharist.
And as they were eating, Jesus took bread, and blessed it, and brake it, and gave it to the disciples, and said, Take, eat; this is my body. And he took the cup, and gave thanks, and gave it to them, saying, Drink ye all of it; For this is my blood of the new testament, which is shed for many for the remission of sins. But I say unto you, I will not drink henceforth of this fruit of the vine, until that day when I drink it new with you in my Father's kingdom. (Matthew 26:26-29)

None of these passages specifically mentions the resurrection, but there is no reason to celebrate the death without the resurrection. Without the resurrection, the death of the Christ is meaningless. “And if Christ be not raised, your faith is vain; ye are yet in your sins.” (1 Corinthians 15:17) So when we participate in the Lord’s Supper we should be celebrating the resurrection as much as the death.
